Cellars

In the heart of the capital of Cava, from the early nineteenth century, stands the old cellar "Cal Batllevell" formed by two small domed rooms of limestone with lime mortar joints of a few meters below ground. In 1986, Miquel Rosell decides to embark on the beautiful, yet complicated world of cava. Keeping the old cellar, ground floor and basement were renovated resulting in the current two-storey warehouse and shipping room.
The cavas elaborated in Rosell Gallart have always opted for Brut Nature, long aging without any added, maintaining the traditional character and method, but knowing gradually adapt to modernity and the new age. Since beginning a completely manual, to the current semiautomàtic line of "desgorjat", the facilities have been modernized and improved, but the processes and the secrets of our method have remained intact, always betting optimization of a traditional process and a familiar doing.
In 2002, we decided to recover an ancient cellar of a nearby house to start a new project, which really were the beginings of our history: the aging of wines. Thus, it creates the "Celler Cal Serrador", a basement cellar with brick arches and brick, and optimal conditions of temperature and humidity for aging wine in oak barrels and later bottle aging of the VINUET wines
